Instant pot Mexican rice
In the era of busy lives, instant pots have become a trusted ally in many kitchens. Their ability to reduce cooking time by up to 70% is unparalleled, making them an excellent choice for individuals with limited time to devote to meal preparation. By raising the boiling point of water and trapping steam, instant pots preserve nutrients and flavors while minimizing water usage. This dual benefit of convenience and healthy eating makes instant pots a valuable addition to any kitchen.
In terms of versatility, instant pots are incredibly capable, allowing users to cook a wide range of dishes, including their own rice. For those seeking a flavorful experience, making Mexican rice is an excellent option.
To do so, simply gather the following ingredients: 1 tablespoon of cooking oil, 2 large cloves garlic (minced), ½ medium onion (finely chopped), 1 cup of rice grain, 1 ½ cups low-sodium chicken stock, ½ cup tomato sauce, 1 teaspoon salt, ¼ teaspoon ground cumin, and a pinch of cayenne pepper. To begin, turn your instant pot to the sauté function and cover the bottom with cooking oil. Stir in the onions until they are soft, which should take around 4-5 minutes.
Next, add garlic and cook for an additional 30 seconds. Then, add rice to the pot, mixing until it is lightly browned and coated with oil. Following this, pour in your chicken stock, stirring to combine. Add the tomato sauce, salt, pepper, cumin, and a pinch of cayenne pepper, then close the lid and seal the vent. Set the timer for 7 minutes and allow 10-15 minutes for pressure to build. Afterward, carefully release the pressure and unlock the lid. Finally, stir the rice and serve.
Instant pot Mexican chicken soup
When it comes to whipping up a delicious and warming bowl of soup, Instant Pots are a game-changer. Gone are the days of waiting for what feels like an eternity for your soup to heat up – with this trusty kitchen companion, you can have piping hot goodness in no time. One of our favorite recipes that’s perfect for a quick and satisfying meal is Mexican Chicken Soup. This flavorful dish is packed with nutritious ingredients and is incredibly easy to make.
To get started, fire up your Instant Pot and set it to sauté mode. Add some olive oil, diced onion, and minced garlic, cooking until the onion is soft and translucent. Next, add in the chicken breast, black beans, corn, crushed tomatoes, red pepper flakes (if you like a little heat), jalapeño (optional), salt, and pepper. Stir everything together to ensure the ingredients are well combined. Close the lid, lock it into place, and set the timer for 17 minutes at high pressure.
Let the Instant Pot do its magic, allowing the pressure to build for about 10-15 minutes before releasing it carefully over the next 5 minutes. Once the pressure has been released, remove the lid and take out the chicken breast. Shred it using two forks and return it to the pot with the remaining ingredients. Add in any leftover chicken stock and seasonings, then stir everything together.
Finally, cover the pot and cook for an additional 3 minutes at high pressure, followed by a quick release of the pressure when done. Serve hot and enjoy! Instant Pots aren’t just limited to soups, though – they’re also perfect for whipping up delicious vegetarian dishes.
